At Sobell House Hospice<\/strong> in Oxfordshire, chef Spencer Richards<\/strong> is doing far more than cooking\u2014he\u2019s creating comfort and meaningful moments for patients in their final days.<\/p>\n

Richards prepares what is often a patient\u2019s last meal<\/strong>, calling it \u201cthe greatest privilege\u201d of his profession. He personalizes dishes for each person, from making street food for a young patient who disliked the menu to baking a first-ever birthday cake<\/strong> for a 93-year-old, a request that moved her to tears.<\/p>\n

Birthday cakes are the most common wish, he says, especially for patients who feel isolated. He also carefully adapts meals to medical needs, adjusting textures and flavors affected by treatment or age\u2014whether that means cr\u00e8me br\u00fbl\u00e9e, jelly, or ice cream.<\/p>\n

\u201cFood is powerfully emotive,\u201d Richards explains, capable of evoking memories and creating new ones. Families often return just to thank him, reminding him why his work matters so deeply.<\/p>\n
